My friend Nicola gave me this recipe years ago & it’s been a favourite of mine ever since…

Using only 3 ingredients, it is truly satisfying and so simple to make, it’s always a hit when served to friends and family and is dairy and gluten free with some nice antioxidants and magnesium from the cacao powder + satiating fats from the coconut cream and some fibre and sweetness from the dates – natures caramel!

Ingredients

1 tin coconut cream, chilled overnight
1 cup pitted dates
Raw cacao powder to taste

Method

Blend coconut cream & dates in food processor till thick & just combined.
Add cacao powder & combine.
Share amongst small bowls & pop in the fridge to set & chill.

Optional extras / serving suggestions

Add in your favourite flavours ie; cinnamon / cayenne pepper / orange peel.
Top with fresh berries, biscotti and/or crushed nuts.
